Mulyati Effendi Program Studi Biologi Fakultas Matematika dan Ilmu Pengetahuan Alam Universitas Pakuan Email : dhilahdhil14@gmail.com ABSTRACT Tilapia (Oreochromis niloticus) species of fish have high economic value and good nurition but are especially susceptible to decay. The common people often use formaldehyde as a preservative for fish to prevent decay quickly. The use of formaldehyde chemicals can be replaced by a natural compound that can cause decay or slow down decay, one of which is the Eucheuma spinosum red algae containing an antibacterial compound. The study aims to learn how the extract of Eucheuma spinosum red algae affects the growth of bacteria and the organoleptic value of the nila fish (Oreochromis niloticus). The design done in this study is grouping a random grouping pattern. Treatment of nila fish is soaking in aquadest solution and E. spinosum extract 800 ppm, 900 ppm, 1000 ppm and formaldehyde solution 1% by noting the time of storage is 6 hours , 18 hours, 30 hours, 42 hours and times the loop. Data analysis USES variance analysis (ANOVA). Research shows that extract of Eucheuma spinosum in a concentration of 800 ppm, 900 ppm, 1000 ppm in a storage of 6 hours, 18 hours, 30 hours and 42 hours has not made the difference to the total tilapia fish bacteria (Oreochromis niloticus). The Eucheuma spinosum extract at the concentration of 1000 ppm is viewed qualitatively as equal to the ability of formaldehyde as an antibacterial on the tilapia. Eucheuma spinosum extract has not been able to maintain the quality of the tilapia fish (Oreochromis niloticus) based on organoleptic tests on storage at 6 hours, 18 hours, 30 hours and 42 hours.
